30 hours of levitation
Our high-quality pizza and focaccia bases are made of 30 hours natural long-levitation dough, by using the indirect method of “biga”. Thanks to the long levitation process, starches and proteins contained in the flour (which are heavy to digest) are being transformed into sugars and amino acids. This allows the product to be totally digestible, eliminating that sense of heaviness and bloating. From an organoleptic point of view, the indirect method, which consists of 30 hours of long levitation divided in two parts (24h + 6h), improves our product’s aroma and taste. From a nutritional point of view, it improves glycemic response and mineral salts absorption. Moreover, thanks to the long levitation process and the high-quality flour used, our products do not require the use of chemical additives.

Our water from the
Gran Sasso springs
Our dough is 75% hydrated, which allows our finalized product to have a spongy texture, and therefore, to be chewed in less time. The water we use comes directly from the natural springs of the Gran Sasso Mountains. Furthermore, since the dough contains 75% of water, the finalized product does not dry out and has a longer life on the shelf. The product remains fresh even after many hours it has been cooked. This means that both focaccia and pizza can be eaten cold, or reheated in order to be crunchy outside and tender inside. In addition, our dough does not contain animal fats. It only contains sunflower oil, which is free of saturated fats and helps reducing risks of cardiovascular disease. Moreover, since our product contains neither animal fats nor dairy products, it is perfect for both vegetarian or vegan diet (by also utilizing vegetarian toppings).
